Zucchini Banana Muffins
OHHH MY GOSH. These are next level good. Like I could maybe find a husband if I started handing these out to the eligible bachelors on the street. Plus… they have vegetables in them?! I mean need I say more…
What you will need:
2 ripe mashed bananas
2 eggs
1 cup grated zucchini
3 tbsp. Melted Grass fed butter
1/3 cup pure maple syrup
1 tsp. Vanilla extract
1/2 tsp. Baking soda
1/4 tsp. Baking powder
1/4 tsp. Celtic sea salt
1 cup gf rolled oats
1/2 cup vanilla sprout living protein powder
3/4 cup gf buckwheat flour
1/3 cup unsweetened coconut milk
How to Make:
Preheat your oven to 350.
Squeeze the water out of the shredded zucchini.
Mix all your ingredients together!
Line your muffin tin with paper cups (I used @ifyoucareusa brand)
Pour your batter into each muffin cup.
Cook for 18-20 minutes.
Sprinkle @maldon salt on top of each muffin!
Enjoy. These are so yum, I like to top mine with a little nut butter. *Blood sugar hack: pair with a form of protein or eat as a dessert!
