Zucchini Banana Muffins

OHHH MY GOSH. These are next level good. Like I could maybe find a husband if I started handing these out to the eligible bachelors on the street. Plus… they have vegetables in them?! I mean need I say more…

What you will need:

  • 2 ripe mashed bananas

  • 2 eggs

  • 1 cup grated zucchini

  • 3 tbsp. Melted Grass fed butter

  • 1/3 cup pure maple syrup

  • 1 tsp. Vanilla extract

  • 1/2 tsp. Baking soda

  • 1/4 tsp. Baking powder

  • 1/4 tsp. Celtic sea salt

  • 1 cup gf rolled oats

  • 1/2 cup vanilla sprout living protein powder

  • 3/4 cup gf buckwheat flour

  • 1/3 cup unsweetened coconut milk

How to Make:

  1. Preheat your oven to 350.

  2. Squeeze the water out of the shredded zucchini.

  3. Mix all your ingredients together!

  4. Line your muffin tin with paper cups (I used @ifyoucareusa brand)

  5. Pour your batter into each muffin cup.

  6. Cook for 18-20 minutes.

  7. Sprinkle @maldon salt on top of each muffin!

  8. Enjoy. These are so yum, I like to top mine with a little nut butter. *Blood sugar hack: pair with a form of protein or eat as a dessert!
